Olives are grown all over Spain, but there are five main areas where they are produced; Andalusia, Castilla la Mancha, Extremadura, Catalonia and a series of islands comprising Aragon, Valencia, Navarra, Murcia and the Balearic islands.

According to the Spanish Olive Oil Agency, there are 433 companies specialised in the seasoning and packing of table olives: 240 of them are from Andalusia, 86 from Extremadura, 37 from Aragon and 16 from Murcia. The rest are mainly from Castilla -La Mancha, Catalonia, Valencia and Navarra.
