The table olive is a product with an increasing economic and social role.  The tree that produces the table olive needs to be taken care of in a very specific and skilled manner, and once the olives reach their appropriate ripeness, they are hand picked in order to avoid damage to the fruit. A great amount of labour is involved in this delicate process.
